Our Story

Hand-made thekua

Swad-e-Bihar began at a kitchen table in Manjhagarh, a small town in Gopalganj district, close enough to the Uttar Pradesh border that both states claim the food. For years the murmura, thekua and til laddu made there only travelled as far as relatives could carry them — in trains, in tiffin boxes, wrapped in newspaper.

The idea for a shop came from everyone who left. People who moved to Patna, Delhi, Bangalore and further kept asking for the same few things from home, and there was no honest way to send them. What you could buy in a city was either a mass-market brand or a sweet shop with no idea when the batch was fried.

So we started packing properly and shipping — first to the families who asked, then to anyone who wanted the real thing. The recipes haven't changed. The scale is still small on purpose. And every box still leaves from Gopalganj.

Small batches, always

Nothing is made weeks ahead. Batches are sized to a few days of orders so the murmura is still crackling and the laddu still soft when it reaches you.

Ingredients you can name

Desi ghee, jaggery, rock salt, real spices. No palm oil, no preservatives, no colours — if it wouldn't go in a home kitchen, it doesn't go in ours.

Recipes from the family

The thekua mould, the anrsa method, the exact murmura masala ratio — these came from the women in the family, not a food lab.

Fair to the makers

The people rolling laddus and shaping litti are from in and around Manjhagarh, paid by the day, not the piece.
