Til Gud Laddu for Makar Sankranti

Sesame and jaggery is the classic Sankranti sweet across the Hindi belt — warming, iron-rich and made without a gram of refined sugar.

Ingredients

  • 1 cup white sesame seeds
  • 3/4 cup grated jaggery
  • 1 tbsp ghee
  • 1/4 tsp cardamom powder

Method

  1. 1Dry-roast the sesame seeds on low heat, stirring constantly, until they turn a shade darker and start to pop. Tip onto a plate.
  2. 2In the same pan melt the ghee, add the jaggery and cook on low until it melts and bubbles — about 2 minutes. Test a drop in cold water; it should form a soft ball.
  3. 3Take the pan off the heat, stir in the sesame and cardamom quickly and thoroughly.
  4. 4While it is still hot enough to handle, grease your palms with ghee and roll small tight balls. Work fast — the mix sets as it cools.
  5. 5Cool completely, then store in an airtight jar for up to three weeks.
